Simple Tomato Bruschetta

This is a very simple recipe and we thought if we should share it here but as it is something we love to eat in Summer and as this is a space of dishes we enjoy to make and eat we thought it should have its space as well. :) 

We are talking about a super simple bruschetta, for which you don't need much apart from a few - but only the best - ingredients. 

Recipe: 

  • Some slices of good sourdough bread
  • Sweet, sweet Summer tomatoes
  • Fresh basil
  • Some big cloves of garlic
  • Olive oil, (Maldon) sea salt & black pepper

Cut your bread into not too thick and not too thin slices and toast them until they are crunchy but also remain their softness in the middle in order to soak up the juices from the tomatoes & olive oil. 

Chop up the tomatoes in cubes put into a bowl, gently tear the basil leaves (and be generous with it).

After the bread is toasted take the garlic and peel of the skin and cut in half - if you are making lots of bruschetta, you can also just take a whole head of garlic and cut it in half - now rub the garlic into the hot bread so you can see it shining on the surface of the toast. Add the tomatoes - basil mix (again, be generous) and finish the bruschetta by adding olive oil, pepper and salt.
